I made a pot of beans tonight. Actually soaked those bitches myself and cooked them. No from the can in this house! [At least not tonight, anyway.] I used half a pound [1/2 a bag] of kidney beans and half a pound of chickpeas [aka garbanzo beans]. I put the beans in a big pot and covered them with hot water. I let them hang out in the water until it got murky-about two hours. I drained off the water and then repeated about five times-total soak time of about six hours. I rinsed the beans and added a couple of cloves of garlic to the pot. Then I added about three teaspoons worth of dried thyme and a teaspoon of dried basil. Then came the bacon grease. You can’t be from the South and not have a cup of bacon grease in the fridge. I probably used about two tablespoons worth of bacon grease. I then added a packet of dried onion soup mix and covered the pot with aluminum foil and set it to simmer for about two hours. When everything was said and done I had a pot of beans to write on my site about.
Tucker has a temporary job. He’s helping one of my uncles clean out the house that my cousin who committed suicide owned. Lots of manual labor since they’re having to clear out a lot of broken limbs from the ice storm but I can already tell a difference in Tucker’s mood. Tucker not being able to find a job is really wearing on him and even though he’s been gone for ten hours a day, it’s good to see him in better spirits.
That’s about all I have for tonight. I’m a slacker today and tomorrow I plan on indulging in some more PS3 action. I’ve been denying my gamer self for way too long and I have to have my fix.
