Summer might be on its way out but there’s still plenty of time for summer parties and spending time with friends.
Gin may not be for everyone but it’s a personal favorite of mine and an underutilized spirit at casual get-togethers. Your friends are sure to be impressed by these three pretty cocktails and you don’t even have to let them know how easy they are to make.
- 1/2 cup honey
- 1/2 cup hot water
- 3 cups freshly brewed jasmine tea, cooled
- 3/4 cup gin
- 3/4 cup limoncello*
- 3/4 cup fresh lemon juice
- 1/2 cup fresh grapefruit juice
- 1 cup chilled club soda
- Lemon slices (for garnish)
Mix the honey and 1/2 cup hot water in a pitcher until honey is dissolved. Put it in the fridge until it’s cooled down. Combine honey water, jasmine tea, gin, limoncello, lemon juice, and grapefruit juice in the pitcher. Add club soda and stir to blend. Fill six 1-pint mason jars or 6 tall glasses with ice cubes. Divide tea mixture among jars; top each with lemon slice.
- 2 large cucumbers (1 1/2 pounds total)
- 1/2 cup gin
- 4 teaspoons fresh lime juice
- 1 tablespoon sugar
- 1 cup ice cubes
- Lime slices
Slice four 1/4-inch-thick slices from 1 cucumber. Peel and chop remaining cucumbers; purée in a food processor until smooth. Strain into a big bowl so you’re left with cucumber juice.
Mix 1 cup cucumber juice, gin, lime juice, and sugar in pitcher; stir until sugar dissolves. Add ice; mix well. Immediately strain mixture into 4 small Martini glasses. Garnish with lime and cucumber slices and serve.
- 3/4 cup pineapple juice
- 6 tablespoons gin
- 4 teaspoons fresh lemon juice
- 4 teaspoons Simple Syrup
- 1 1/2 teaspoons blue curaçao liqueur
- 4 dashes of angostura bitters
- 2 unsprayed purple orchids (for garnish)
Mix first 6 ingredients in cocktail shaker. Fill with ice. Cover and shake well. Strain into 2 Daiquiri or Martini glasses. Garnish each with orchid, if desired, and serve.
